Light Romanian Mămăligă with Cottage Cheese & Kefir
A lighter take on the classic Romanian mămăligă, this version uses creamy cottage cheese and tangy kefir for a high-protein breakfast. It's a comforting, gluten-free dish that's fantastic for gut health.
- fine cornmeal (polenta) 120g
- water 600ml
- sea salt 1 tsp
- butter 20g
- low-fat cottage cheese 500g
- kefir 200ml
- salty cheese (Telemea or Feta), crumbled 40g
- fresh dill, chopped 2 tbsp

In a medium, heavy-bottomed pot, bring the 600ml of water and 1 tsp of sea salt to a rolling boil.

Lower the heat to a simmer. Start whisking the water while you slowly pour in the 120g of fine cornmeal in a thin, steady stream. The trick I learnt the hard way is to never dump it in all at once!

Continue whisking for 1-2 minutes until the mixture thickens and no lumps remain. Switch to a wooden spoon.

Cook on low heat for 15-20 minutes, stirring frequently to prevent it from sticking to the bottom of the pot. The mămăligă is ready when it pulls away from the sides of the pot as you stir.

Once cooked, turn off the heat and stir in the 20g of butter until it melts completely and makes the mămăligă glossy.

To serve, divide the warm mămăligă among four bowls. Top each serving with a generous scoop of the 500g of low-fat cottage cheese.

Drizzle the 200ml of kefir over the cottage cheese and mămăligă.

Finally, sprinkle with the 40g of crumbled salty cheese and 2 tbsp of fresh dill before serving immediately.
Mămăligă is one of those dishes that feels like a hug from the inside. In Romania, and across much of Eastern Europe, it’s more than just polenta; it’s a cornerstone of home cooking. It can be a simple side for stews or a main course in its own right, often served with sour cream, cheese, and maybe a fried egg. My mum made this every few weeks, and the simple, earthy smell of cornmeal cooking on the stove is a scent that instantly takes me back to her kitchen. It’s peasant food at its finest, humble, filling, and satisfying.
This version is my own lighter interpretation, designed to be a powerful, protein-packed breakfast that keeps you full for hours. Instead of the traditional heavy sour cream, I use a combination of low-fat cottage cheese and tangy kefir. This swap not only cuts down on fat but also introduces a huge dose of protein and gut-friendly probiotics first thing in the morning. It transforms the dish from a simple carb base into a balanced meal without losing any of its comforting soul. It’s proof that you don’t need to sacrifice flavour or tradition to eat well.
Serving & Variations
I think this dish is perfect as it is, served hot right out of the pot where the warm mămăligă slightly melts the cheese. The contrast between the creamy, smooth cornmeal and the cool, tangy toppings is just wonderful. If you want to add even more to it, a soft-poached egg on top is fantastic; the runny yolk creates a rich sauce that brings everything together. For a bit of green, some simple sautéed mushrooms or spinach stirred through the mămăligă before serving also works beautifully.
Storing Leftovers
Mămăligă changes completely once it cools, firming up into a solid block. Don’t throw it out! This is my favourite part. You can store the leftover block in an airtight container in the fridge for up to three days. When you’re ready to eat, slice it into thick pieces and pan-fry them in a little butter or olive oil until golden and crispy on both sides. It’s an entirely different experience, a crispy, savoury cake that’s amazing with a fresh salad or, you guessed it, another dollop of cottage cheese.
