Light Cottage Cheese with Fresh Cherries & Mint

First, prepare your cherries. Wash them well, remove the stems, and pit them. The trick I learned the hard way is that cherry juice stains, so be careful! Slice each cherry in half.

If you like a very smooth texture, you can blend the cottage cheese for about 30 seconds with an immersion blender. I usually skip this as I like the traditional curd texture.

In a medium bowl, combine the cottage cheese, halved cherries, most of the chopped fresh mint, and the honey. Gently fold everything together until just combined.

Divide the mixture between two bowls. Top with the remaining fresh mint and a sprinkle of toasted flaked almonds for a wonderful crunch.

I usually eat this just as it is, straight from the bowl. It’s a complete and balanced meal on its own. For a more substantial breakfast, you can serve it alongside a slice of dark, dense rye bread. It also makes a fantastic high-protein afternoon snack when you need a little boost of energy. This dish is best enjoyed immediately after making it, as the mint is at its most fragrant and the cherries are fresh. If you do have leftovers, you can store them in an airtight container in the fridge for up to a day, but be aware the texture might become a little watery.
